Winery Pavlica is a small and young family winery focused on making wine from grapes which ripe only on 12 acres of vineyards, which are owned by our family. We believe that the process of making wine starts at the vineyard and that’s why we take care of the vineyard with our own hands while maintaining respect for nature. When processing grapes and making wine we are as thoughtful as possible while not interfering much and letting the uniqueness of the origin and the variety of the wine shine through.
Winery Pavlica was officially established in 2012. However, it began to form in 2006 when Honza, a student of Mendel University in Brno, bought his first vineyard, rented a wine cellar, and took small steps to work on his lifelong dream. He paved his own road since the very beginning.
The present production of our winery exceeds 30,000 bottles of wine, which are delivered to selected restaurants, bistros, cafes, wine shops, but also to you - our customers.

Our vineyards are located in a village Zaječí which is a part of the Moravian winemaking region, further known as the Velkopavlovice winemaking subarea. The grapes grow on 12 acres of vineyards, which are located on the south hillside of a site suitable for vineyards growing called Pod Novou Horou.
You can really sense the unique local terroir in our wines, which is formed by the Palava microclimate and the Nové Mlýny reservoirs combined with the geological subsoil, which is composed mainly out of calcium bentonite clay, claystone, sandstone, and conglomerate of paleolithic age.
Our wine offer consists of young varieties such as Sauvignon Blanc, Hibernal, Palava, Pinot Gris, Pinot Blanc, Merlot, and very soon even Cabernet Sauvignon, and old varieties such as Welschriesling, Neuburger, Grüner Veltliner, Gewürztraminer, St. Laurent, and Blauer Portugieser, which grow on 40 years old vines.

Although Honza doesn’t come from a traditional wine family, he has always been very fond of wine. After he didn’t manage to pass his entrance exams to Musical Conservatory, where he wanted to study trumpet playing, he decided to follow his grandfather František Kocourek’s footsteps and he started studying at the High School of Winemaking in Valtice. He continued his studies at the Mendel University in Brno, which didn’t only give him a great education but it also gave him many friendships with other passionate wine-makers and most importantly his wife Lenka.
After graduating from university Honza worked as a technologist and a cellar master in a large wine society. However, he still continued educating himself and he collected experience from both czech and foreign wineries. In the meantime, he still kept his dream alive and continued to build his very own winery, which was officially established in 2012.

Dégustation

In our wine cellar, where you can participate in two alternatives of wine-tasting:
  1. Short wine-tasting, which is one and a half hours long and costs 350 CZK per person. For this price, you will taste 8 samples of different wines and aside from these you will also receive water, cheese plate, bread, and most importantly, our wine-maker will make a commentary of the different wines.
  2. Long wine-tasting, which is four hours long and costs 700 CZK per person. For this price, you will taste 12 samples of different wines and aside from these you will also receive water, meat and cheese plate, bread, and most importantly, our wine-maker will make a commentary of the different wines. There is an option of ordering extra dinner for 150 CZK per person or special menu by Carlini (600,- CZK/person). If you want to see our winery, we will be happy to provide you with a tour.
The wine-tasting is in one of our wine-cellars, which can hold either 10 or 30 people. The minimal amount of participants for the wine-tasting is 8 people.
